Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly under running water and pat them dry.
  3. Poke several holes in each sweet potato with a fork.
  4. Rub each sweet potato with olive oil, ensuring they are well coated.
  5. Sprinkle salt, black pepper, garlic powder, and smoked paprika over the sweet potatoes.
  6. Place the sweet potatoes directly on the oven rack or on a lined baking sheet. Bake for 45-60 minutes, or until tender.
  7. Once baked, remove the sweet potatoes from the oven and let them cool for 10-15 minutes.
  8. Slice each sweet potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch around the skin.
  9. Place the scooped-out flesh in a mixing bowl.
  10. Add Greek yogurt (or sour cream), half of the cheddar cheese, and half of the green onions. If using bacon, add it now.
  11. Mash the mixture until smooth and creamy, adjusting the consistency with more yogurt if needed.
  12. Taste and adjust seasoning as necessary.
  13. Preheat your oven to 375°F (190°C) if it was turned off.
  14. Spoon the filling back into the sweet potato skins, packing it in well.
  15. Sprinkle the remaining cheddar cheese on top of each stuffed sweet potato.
  16. Place the filled sweet potatoes on a lined baking sheet.
  17. Bake for an additional 20-25 minutes, or until the cheese is melted and bubbly.
  18. Let the sweet potatoes cool for a few minutes before serving.
