- 4 medium sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 cup Greek yogurt (or sour cream)
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1/4 cup cooked and crumbled bacon (optional)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly under running water and pat them dry.
- Poke several holes in each sweet potato with a fork.
- Rub each sweet potato with olive oil, ensuring they are well coated.
- Sprinkle salt, black pepper, garlic powder, and smoked paprika over the sweet potatoes.
- Place the sweet potatoes directly on the oven rack or on a lined baking sheet. Bake for 45-60 minutes, or until tender.
- Once baked, remove the sweet potatoes from the oven and let them cool for 10-15 minutes.
- Slice each sweet potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch around the skin.
- Place the scooped-out flesh in a mixing bowl.
- Add Greek yogurt (or sour cream), half of the cheddar cheese, and half of the green onions. If using bacon, add it now.
- Mash the mixture until smooth and creamy, adjusting the consistency with more yogurt if needed.
- Taste and adjust seasoning as necessary.
- Preheat your oven to 375°F (190°C) if it was turned off.
- Spoon the filling back into the sweet potato skins, packing it in well.
- Sprinkle the remaining cheddar cheese on top of each stuffed sweet potato.
- Place the filled sweet potatoes on a lined baking sheet.
- Bake for an additional 20-25 minutes, or until the cheese is melted and bubbly.
- Let the sweet potatoes cool for a few minutes before serving.
- Garnish with remaining chopped green onions and fresh parsley.
- Serve warm and enjoy!

- For a vegetarian option, omit the bacon.
- Feel free to customize the filling with your favorite herbs or spices.
