- 1 pound fresh strawberries, hulled and halved
- 2 tablespoons olive oil
- 2 tablespoons honey (plus extra for drizzling)
- 1 teaspoon vanilla extract
- 1 teaspoon balsamic vinegar
- 1/4 teaspoon salt
- 8 slices of rustic bread (like sourdough or ciabatta)
- 1 cup ricotta cheese
- Fresh mint leaves, for garnish
- Freshly cracked black pepper, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the hulled and halved strawberries with olive oil, honey, vanilla extract, balsamic vinegar, and salt. Toss gently until well coated.
- Spread the strawberries in a single layer on a baking sheet lined with parchment paper.
- Roast for 20-25 minutes, stirring halfway through, until soft and caramelized.
- Remove from the oven and let cool slightly.
- Heat a skillet or grill pan over medium heat (or use a toaster).
- Lightly brush each slice of rustic bread with olive oil on both sides.
- Toast the bread for 2-3 minutes on each side until golden brown and crispy.
- Remove from heat and let cool slightly.
- In a medium bowl, scoop out the ricotta cheese and whip until creamy and smooth.
- Spread a generous layer of whipped ricotta on each slice of toasted bread.
- Top with roasted strawberries and drizzle with extra honey if desired.
- Garnish with fresh mint leaves and optionally sprinkle with freshly cracked black pepper.
