  • 8 slices of rustic bread (like sourdough or ciabatta)
  • 1 cup ricotta cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the hulled and halved strawberries with olive oil, honey, vanilla extract, balsamic vinegar, and salt. Toss gently until well coated.
  3. Spread the strawberries in a single layer on a baking sheet lined with parchment paper.
  4. Roast for 20-25 minutes, stirring halfway through, until soft and caramelized.
  5. Remove from the oven and let cool slightly.
  6. Heat a skillet or grill pan over medium heat (or use a toaster).
  7. Lightly brush each slice of rustic bread with olive oil on both sides.
