- 1 cup all-purpose flour
- 2 tablespoons poppy seeds
- 2 large eggs
- 1 ½ cups milk
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest (from about 1 lemon)
- 2 tablespoons melted butter (plus more for cooking)
- Pinch of salt
- Powdered sugar (for dusting)
- Fresh lemon juice (for serving)
- Optional: whipped cream or fresh berries (for serving)
Instructions
- In a large mixing bowl, combine the flour, poppy seeds, and a pinch of salt. Whisk them together until well mixed.
- In a separate bowl, crack the two large eggs and whisk them lightly. Add the milk, granulated sugar, vanilla extract, and lemon zest to the eggs. Whisk until everything is combined and smooth.
- Pour the wet ingredients into the bowl with the dry ingredients. Gently mix with a whisk until just combined. A few lumps are perfectly fine!
- Stir in the melted butter. Let the batter rest for about 30 minutes at room temperature.
- Heat a non-stick skillet or crêpe pan over medium heat. Add a small amount of butter to coat the bottom of the pan.
- Pour about ¼ cup of the batter into the center of the skillet. Quickly tilt and swirl the pan to spread the batter evenly into a thin layer (about 6-8 inches in diameter).
- Cook the crêpe for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden.
- Carefully flip the crêpe using a spatula and cook for another 1-2 minutes on the other side until set and lightly golden.
- Transfer the cooked crêpe to a plate and cover it with a clean kitchen towel to keep warm. Repeat with the remaining batter, adding more butter as needed. You should make about 8-10 crêpes.
- Lay one crêpe flat on a plate. Sprinkle with powdered sugar if desired.
- Drizzle fresh lemon juice over the crêpe.
- Optionally, spread a thin layer of whipped cream or add fresh berries in the center.
- Fold the crêpe in half, then in half again to form a triangle, or roll it up.
- Repeat with remaining crêpes, stacking them on the plate and dusting the top with more powdered sugar.
Notes
- Ensure the skillet is adequately heated before adding the batter to achieve a perfect golden color.
- You can customize the filling with your favorite fruits or spreads for added flavor.
