  • 1 pre-made flatbread or pizza dough
  • 2 ripe pears, thinly sliced
  • 1 cup Gorgonzola cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 1/4 cup walnuts, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze
  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
  • Salt and pepper to taste
  • Fresh arugula for garnish (optional)

Instructions

  1. Preheat your oven to 475°F (245°C).
  2. On a lightly floured surface, roll out your pizza dough into a rectangle or circle, about 1/4 inch thick.
  3. Transfer the rolled-out dough onto a baking sheet lined with parchment paper or a pizza stone.
  4. Brush the surface of the dough lightly with olive oil.
  5. Wash and dry the pears, cut them in half, remove the core, and slice them thinly (about 1/8 inch thick).
  6. In a small bowl, combine the chopped walnuts with a drizzle of olive oil, a pinch of salt, and a sprinkle of pepper.
  7. In another bowl, mix the crumbled Gorgonzola cheese with the shredded mozzarella cheese.
  8. Chop the fresh rosemary if using.
  9. Evenly distribute the sliced pears over the prepared flatbread.
  10. Sprinkle the cheese mixture generously over the pears.
  11. Scatter the chopped walnuts over the cheese.
  12. Sprinkle the chopped rosemary over the top, followed by salt and pepper to taste.
  13. Drizzle a little olive oil over the entire flatbread.
  14. Drizzle some balsamic glaze over the top.
  15. Carefully place the baking sheet or pizza stone in the preheated oven.
  16. Bake for about 12-15 minutes, or until the edges are golden brown and the cheese is bubbly.
  17. Keep an eye on it during the last few minutes to prevent burning.
  18. Once done, remove from the oven and let it cool for a couple of minutes before slicing.
  19. Optionally, add a handful of fresh arugula on top for garnish.
  20. Drizzle a little more balsamic glaze over the top before serving.

Notes

  • Feel free to substitute the Gorgonzola cheese with another cheese of your choice if you prefer a milder flavor.
