Instructions

  1. Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
  2. Slice the ripe peaches into thin wedges or cubes and add them to the bowl with the watermelon.
  3. Roughly chop the fresh mint leaves and toss them into the bowl.
  4. Thinly slice the red onion and add it to the mixing bowl. If desired, soak the slices in cold water for 10 minutes to mellow the flavor.
  5. Crumble the feta cheese and sprinkle it over the fruit and mint mixture.
  6. In a small bowl, squeeze the juice of one lime and mix it with 2 tablespoons of honey.
