- 4 cups of fresh watermelon, cubed
- 2 large ripe peaches, sliced
- 1 cup of fresh mint leaves, roughly chopped
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of red onion, thinly sliced

- 2 tablespoons of honey
- Salt and pepper to taste
Instructions
- Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
- Slice the ripe peaches into thin wedges or cubes and add them to the bowl with the watermelon.
- Roughly chop the fresh mint leaves and toss them into the bowl.
- Thinly slice the red onion and add it to the mixing bowl. If desired, soak the slices in cold water for 10 minutes to mellow the flavor.
- Crumble the feta cheese and sprinkle it over the fruit and mint mixture.
- In a small bowl, squeeze the juice of one lime and mix it with 2 tablespoons of honey.
- Whisk the lime juice and honey until well combined. Season with a pinch of salt and black pepper to taste.
- Pour the dressing over the salad mixture and gently toss everything together, being careful not to mash the fruit.
- Taste the salad and adjust sweetness or tanginess with more honey or lime juice as needed.
- Let the salad chill in the refrigerator for about 30 minutes to allow the flavors to meld.
- Choose a large serving bowl or individual plates for serving.
- Gently spoon the salad into your serving dish, ensuring a good mix of ingredients.
