Enjoy the delightful blend of warm caramelized peaches and creamy Greek yogurt in this elegant dish, perfect for breakfast, brunch, or a light dessert. The natural sweetness of ripe peaches shines through, enhanced by a rich caramel sauce, making it a satisfying treat.

  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 ripe peaches, halved and pitted
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup Greek yogurt (plain or flavored)
  • 1 tablespoon honey (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Wash the peaches under cool running water to remove any dirt or residue.
  2. Cut each peach in half and remove the pit, being careful not to bruise the fruit.
  3. Place the peach halves cut-side up on a plate.
  4. In a large skillet, melt the unsalted butter over medium heat.
  5. Once the butter is melted and bubbling, sprinkle in the brown sugar and stir gently until fully dissolved and bubbling slightly.
  6. Add the cinnamon and vanilla extract to the skillet, mixing until well combined.
  7. Carefully place the peach halves cut-side down into the skillet with the caramel mixture, arranging them in a single layer.
  8. Cook for about 4-5 minutes without moving them to allow for caramelization.
  9. Gently flip the peaches over using tongs and cook for an additional 3-4 minutes, spooning some caramel sauce over the top.
  10. Once tender and caramelized, remove the skillet from heat and let the peaches cool for a few minutes.
  11. In a serving bowl or plate, add a generous scoop of Greek yogurt.
  12. Carefully place the warm caramelized peach halves on top of the yogurt, cut side facing up.
  13. Drizzle honey over the top if desired.
  14. Garnish with fresh mint leaves for a pop of color and freshness.
