- 4 ripe peaches, halved and pitted
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 cup Greek yogurt (plain or flavored)
- 1 tablespoon honey (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- Wash the peaches under cool running water to remove any dirt or residue.
- Cut each peach in half and remove the pit, being careful not to bruise the fruit.
- Place the peach halves cut-side up on a plate.
- In a large skillet, melt the unsalted butter over medium heat.
- Once the butter is melted and bubbling, sprinkle in the brown sugar and stir gently until fully dissolved and bubbling slightly.
- Add the cinnamon and vanilla extract to the skillet, mixing until well combined.
- Carefully place the peach halves cut-side down into the skillet with the caramel mixture, arranging them in a single layer.
- Cook for about 4-5 minutes without moving them to allow for caramelization.
- Gently flip the peaches over using tongs and cook for an additional 3-4 minutes, spooning some caramel sauce over the top.
- Once tender and caramelized, remove the skillet from heat and let the peaches cool for a few minutes.
- In a serving bowl or plate, add a generous scoop of Greek yogurt.
- Carefully place the warm caramelized peach halves on top of the yogurt, cut side facing up.
- Drizzle honey over the top if desired.
- Garnish with fresh mint leaves for a pop of color and freshness.
