Instructions

  1. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, and finely chopped red onion.
  2. Add the Kalamata olives to the bowl.
  3. Crumble the feta cheese over the top of the salad.
  4. Sprinkle in the chopped parsley and mint.
  5. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  6. Pour the dressing over the salad and gently toss everything together until well combined.
  7. Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 30 minutes.
  8. While the salad is chilling, slice the baguette into thin rounds, about 1/2 inch thick. Optionally, toast them for a crunchy texture.
  9. Preheat your oven to 400°F (200°C).
  10. Arrange the sliced baguette on a baking sheet in a single layer.
