- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup Kalamata olives, pitted and halved
- 1 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 baguette, sliced (for serving)
Instructions
- In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, and finely chopped red onion.
- Add the Kalamata olives to the bowl.
- Crumble the feta cheese over the top of the salad.
- Sprinkle in the chopped parsley and mint.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
- Pour the dressing over the salad and gently toss everything together until well combined.
- Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 30 minutes.
- While the salad is chilling, slice the baguette into thin rounds, about 1/2 inch thick. Optionally, toast them for a crunchy texture.
- Preheat your oven to 400°F (200°C).
- Arrange the sliced baguette on a baking sheet in a single layer.
- Brush each slice lightly with olive oil.
- Bake in the preheated oven for about 5-7 minutes, or until the edges are golden brown. Keep an eye on them to prevent burning.
- Once toasted, remove from the oven and let them cool slightly.
- Take the chilled salad out of the refrigerator and give it a gentle toss.
- Scoop a generous amount of the salad mixture onto each slice of toasted baguette.
- Arrange the assembled appetizers on a serving platter and garnish with extra sprigs of parsley or mint if desired.
- Serve immediately, or keep the salad and baguette separate until ready to serve.
Notes
- For a spicy kick, consider adding sliced jalapeños or a sprinkle of red pepper flakes to the salad.
- If you’re not a fan of feta cheese, you can substitute it with goat cheese or omit it entirely for a dairy-free option.
