Instructions

  1. Fill a small saucepan with water and bring it to a gentle boil over medium heat.
  2. Once boiling, carefully lower the eggs into the pot using a slotted spoon to prevent cracking.
  3. Set a timer for 6 to 7 minutes, depending on your preferred yolk consistency (6 minutes for a runny yolk).
  4. While the eggs cook, prepare an ice bath with cold water and ice cubes.
  5. When the timer goes off, transfer the eggs to the ice bath using the slotted spoon and let them cool for about 5 minutes.
  6. Once cooled, gently tap the eggs on a hard surface to crack the shell, then peel them under running water for easier removal. Set aside.
  7. Cut the ripe avocado in half lengthwise and remove the pit carefully.
  8. Scoop the flesh into a bowl using a spoon.
  9. Mash the avocado with a fork to your desired consistency (chunky or smooth).
  10. Add a pinch of salt, freshly ground black pepper, and optional lemon juice to the mashed avocado. Mix well.
  11. Heat a skillet over medium heat and add the olive oil (or use a toaster).
