- 2 large eggs
- 1 ripe avocado
- 2 slices of your favorite bread (sourdough, whole grain, or gluten-free)
- 1 tablespoon olive oil
- Salt, to taste
- Freshly ground black pepper, to taste
- Red pepper flakes (optional, for a bit of heat)
- Fresh herbs (like cilantro, parsley, or chives, for garnish)
- 1 teaspoon lemon juice (optional, for added flavor)
Instructions
- Fill a small saucepan with water and bring it to a gentle boil over medium heat.
- Once boiling, carefully lower the eggs into the pot using a slotted spoon to prevent cracking.
- Set a timer for 6 to 7 minutes, depending on your preferred yolk consistency (6 minutes for a runny yolk).
- While the eggs cook, prepare an ice bath with cold water and ice cubes.
- When the timer goes off, transfer the eggs to the ice bath using the slotted spoon and let them cool for about 5 minutes.
- Once cooled, gently tap the eggs on a hard surface to crack the shell, then peel them under running water for easier removal. Set aside.
- Cut the ripe avocado in half lengthwise and remove the pit carefully.
- Scoop the flesh into a bowl using a spoon.
- Mash the avocado with a fork to your desired consistency (chunky or smooth).
- Add a pinch of salt, freshly ground black pepper, and optional lemon juice to the mashed avocado. Mix well.
- Heat a skillet over medium heat and add the olive oil (or use a toaster).
- Once hot, add the slices of bread to the skillet and toast each side for about 2-3 minutes until golden brown and crispy.
- Remove the bread from the skillet and place it on a plate. Optionally drizzle with more olive oil.
- Spread a generous amount of the mashed avocado on each slice of toasted bread.
- Carefully slice the jammy eggs in half lengthwise, revealing the runny yolk.
- Place the egg halves on top of the avocado toast, yolk side up.
- Sprinkle with additional salt and freshly ground black pepper.
- For a bit of heat, add red pepper flakes on top.
- Garnish with fresh herbs of your choice, such as cilantro or chives.
