Ingredients
Scale
- 1 pound pork tenderloin, sliced into thin strips
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 2 cups cooked rice (white or brown)
- 1 cup broccoli florets
- 1 cup bell peppers, sliced (any color)
- 1/2 cup green onions, chopped
- Sesame seeds for garnish
Instructions
- In a medium bowl, combine honey, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes (if using). Whisk until well blended.
- Add the sliced pork tenderloin to the marinade, ensuring each piece is well coated. Use your hands for thorough mixing.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or longer for enhanced flavor).
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the marinated pork strips to the skillet, cooking in batches if necessary to avoid overcrowding.
- Cook for 3-4 minutes on each side until browned and cooked through (internal temperature should reach 145°F/63°C). Remove from skillet and set aside.
- In the same skillet, add broccoli florets and sliced bell peppers. Add a splash of olive oil if needed.
- Sauté vegetables for 5-7 minutes until tender but still crisp.
- Return the cooked pork to the skillet, pour any remaining marinade over, and stir to combine. Cook for an additional 2-3 minutes to thicken the sauce.
- Place a generous scoop of cooked rice (about 1 cup) at the bottom of each bowl.
- Spoon the honey garlic pork and vegetable mixture over the rice.
- Top with chopped green onions and sesame seeds. Optionally, drizzle with extra soy sauce or sriracha for added flavor.
Notes
- For a spicier kick, increase the amount of red pepper flakes or add sriracha.
