Ingredients
For the salmon bites:
-
1 pound fresh salmon fillets, skin removed, cut into 1-inch cubes
-
1/2 cup panko breadcrumbs
-
1/4 cup all-purpose flour
-
1 large egg
-
1 teaspoon garlic powder
-
1 teaspoon smoked paprika
-
1/2 teaspoon salt
-
1/2 teaspoon black pepper
-
Cooking spray (for air fryer or baking)
For the sauce:
-
1/2 cup Greek yogurt or mayonnaise
-
1 tablespoon Dijon mustard
-
1 tablespoon honey
-
1 teaspoon lemon juice
-
Pinch of salt and pepper
Instructions
-
Prepare your breading station: Set up three shallow bowls — one with flour, one with beaten egg, and one with panko breadcrumbs mixed with garlic powder, smoked paprika, salt, and pepper.
-
Coat the salmon: Dip each salmon cube first into the flour, then into the egg, and finally into the panko mixture. Press lightly to help the coating stick.
-
Air fry or bake:
-
Air Fryer: Preheat to 400°F. Spray the basket with cooking spray. Arrange salmon bites in a single layer and cook for 8–10 minutes, flipping halfway through.
-
Oven: Preheat to 425°F. Line a baking sheet with parchment paper, arrange the salmon bites, spray lightly with oil, and bake for 12–15 minutes, flipping halfway.
-
-
Make the sauce: In a small bowl, whisk together the Greek yogurt (or mayo), Dijon mustard, honey, lemon juice, salt, and pepper until smooth.
-
Serve: Plate the crispy salmon bites with the sauce for dipping — and get ready for them to disappear fast!
Notes
-
Be sure to pat the salmon cubes dry before breading to help the coating stick better.
-
Feel free to swap the Greek yogurt in the sauce for mayo if you want it extra creamy!
-
Add a pinch of cayenne pepper to the breadcrumb mixture for a spicy version.
-
Leftovers? Reheat them in the air fryer at 375°F for 3-4 minutes to revive that gorgeous crunch.
-
Freezing tip: Freeze cooked salmon bites on a baking sheet before transferring to a bag for easy meals later!
