  • 2 large eggs
  • 1/4 cup green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional, for a little kick)
  • 1/4 teaspoon red pepper flakes (optional, for extra heat)
  • Vegetable oil, for frying

Instructions

  1. Wash the fresh broccoli florets under cold running water to remove any dirt or pesticides.
  2. Chop the broccoli into small, bite-sized pieces. Optionally, steam for 3-4 minutes to soften, then let cool.
  3. In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, and grated Parmesan cheese.
  4. Add the all-purpose flour and breadcrumbs to the bowl, mixing well.
  5. Crack the two large eggs into the mixture and stir to combine.
  6. Add the finely chopped green onions and minced garlic, followed by salt, black pepper, paprika, and red pepper flakes (if using). Mix until well combined.
  7. Use a tablespoon to scoop out the mixture and form each scoop into a patty, about 1/2 inch thick.
  8. Place the shaped fritters on a plate or a baking sheet lined with parchment paper.
  9. In a large skillet, heat about 1/4 inch of vegetable oil over medium heat until hot.
  10. Carefully place a few fritters in the skillet, cooking about 4-5 at a time.
  11. Fry for 3-4 minutes on one side until golden brown and crispy, then flip and cook for an additional 3-4 minutes.
  12. Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb excess oil.
  13. Prepare a dipping sauce if desired, such as a yogurt sauce with lemon juice, salt, and garlic powder.
  14. Arrange the fritters on a serving platter and garnish with fresh herbs if desired.
  15. Serve warm with your dipping sauce.
