- 2 cups fresh broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 1/2 cup breadcrumbs (preferably panko for extra crunch)
- 2 large eggs
- 1/4 cup green onions, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional, for a little kick)
- 1/4 teaspoon red pepper flakes (optional, for extra heat)
- Vegetable oil, for frying
Instructions
- Wash the fresh broccoli florets under cold running water to remove any dirt or pesticides.
- Chop the broccoli into small, bite-sized pieces. Optionally, steam for 3-4 minutes to soften, then let cool.
- In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, and grated Parmesan cheese.
- Add the all-purpose flour and breadcrumbs to the bowl, mixing well.
- Crack the two large eggs into the mixture and stir to combine.
- Add the finely chopped green onions and minced garlic, followed by salt, black pepper, paprika, and red pepper flakes (if using). Mix until well combined.
- Use a tablespoon to scoop out the mixture and form each scoop into a patty, about 1/2 inch thick.
- Place the shaped fritters on a plate or a baking sheet lined with parchment paper.
- In a large skillet, heat about 1/4 inch of vegetable oil over medium heat until hot.
- Carefully place a few fritters in the skillet, cooking about 4-5 at a time.
- Fry for 3-4 minutes on one side until golden brown and crispy, then flip and cook for an additional 3-4 minutes.
- Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb excess oil.
- Prepare a dipping sauce if desired, such as a yogurt sauce with lemon juice, salt, and garlic powder.
- Arrange the fritters on a serving platter and garnish with fresh herbs if desired.
- Serve warm with your dipping sauce.
Notes
- For extra crunch, use panko breadcrumbs.
- Feel free to customize the spices to your taste.
- These fritters can be served as an appetizer, snack, or side dish.
