  • 8 ounces of burrata cheese
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons extra virgin olive oil (plus more for drizzling)
  • 1 tablespoon balsamic vinegar
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 baguette or crusty bread, sliced

Instructions

  1. Carefully remove the burrata from its packaging, avoiding breaking it as it is usually packed in water.
  2. Using a sharp knife, cut the burrata into bite-sized pieces (quarters work well).
  3. Place the burrata pieces on a serving platter, leaving space for the other ingredients.
  4. In a medium bowl, combine the halved cherry tomatoes and torn basil leaves.
  5. Drizzle the olive oil over the tomatoes and basil.
  6. Add the balsamic vinegar to the bowl.
  7. Season with salt and freshly ground black pepper to taste.
  8. If desired, sprinkle in the red pepper flakes for a bit of heat.
  9. Gently toss the mixture until well combined, being careful not to mash the tomatoes.
  10. Scoop some of the tomato and basil mixture and place it on top of each piece of burrata.
  11. Drizzle a little extra olive oil over the assembled burrata and tomatoes.
  12. Sprinkle a few more fresh basil leaves on top for added color and flavor.
  13. Preheat your oven to 400°F (200°C).
  14. Slice the baguette or crusty bread into 1/2-inch thick slices.
  15. Arrange the slices on a baking sheet in a single layer.
  16. Brush each slice lightly with olive oil.
  17. Toast the bread in the oven for about 5-7 minutes, or until golden brown, keeping an eye on them to prevent burning.
  18. Remove the bread from the oven and let it cool slightly before serving.
  19. Arrange the burrata balls with the tomato and basil mixture on a large serving platter.
  20. Place the toasted bread slices around the platter for easy serving.

Notes

  • For a more intense flavor, consider using heirloom tomatoes.
  • This dish is best served fresh, but the tomato mixture can be prepared a few hours in advance and stored in the refrigerator.
