Instructions

  1. Wash the bok choy thoroughly under running water to remove any dirt or grit. Chop into bite-sized pieces, separating the white stems from the leafy greens.
  2. Clean the mushrooms with a damp cloth and slice them thinly.
  3. Peel and thinly slice the onion into half-moons.
  4. Mince the garlic and grate the ginger using a microplane for a fine texture.
  5. Measure out the soy sauce, oyster sauce (if using), and sesame oil.
  6. Heat a large wok or non-stick skillet over medium-high heat. Add the vegetable oil and let it heat until it shimmers.
  7. Add the sliced onions and stir-fry for 2-3 minutes until translucent and slightly caramelized.
  8. Toss in the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.
  9. Add the sliced mushrooms and stir-fry for 4-5 minutes until tender and moisture is released.
  10. Add the bok choy stems first and stir-fry for about 2 minutes until softened.
  11. Add the bok choy leaves, stirring together and cooking for another 2-3 minutes until wilted but vibrant green.
  12. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Sprinkle in the red pepper flakes, and season with salt and pepper to taste. Stir to coat the vegetables evenly.
  13. Cook for an additional minute to meld the flavors. Add a splash of water or vegetable broth if you prefer a saucier stir-fry.
  14. Remove the wok from heat and transfer the stir-fry to a serving dish.
