- 200g feta cheese
- 4 large eggs
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
- Crusty bread, for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Use a medium-sized baking dish or an oven-safe skillet, preferably cast-iron.
- Place the block of feta cheese in the center of the baking dish.
- Scatter the halved cherry tomatoes around the feta.
- Pour the olive oil over the feta and tomatoes.
- Sprinkle dried oregano, salt, and pepper over the dish.
- Bake for about 20 minutes until the feta softens and the tomatoes blister.
- Crack the eggs into a bowl, seasoning lightly with salt and pepper.
- Remove the dish from the oven and make four small wells in the mixture. Crack an egg into each well.
- Bake for an additional 10-12 minutes, until the egg whites are set but yolks are still runny.
- Sprinkle fresh basil or parsley on top.
- Enjoy warm with crusty bread for dipping.
