Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Use a medium-sized baking dish or an oven-safe skillet, preferably cast-iron.
  3. Place the block of feta cheese in the center of the baking dish.
  4. Scatter the halved cherry tomatoes around the feta.
  5. Pour the olive oil over the feta and tomatoes.
  6. Sprinkle dried oregano, salt, and pepper over the dish.
  7. Bake for about 20 minutes until the feta softens and the tomatoes blister.
  8. Crack the eggs into a bowl, seasoning lightly with salt and pepper.
  9. Remove the dish from the oven and make four small wells in the mixture. Crack an egg into each well.
  10. Bake for an additional 10-12 minutes, until the egg whites are set but yolks are still runny.
  11. Sprinkle fresh basil or parsley on top.
