Instructions
- Cut the avocados in half, slice around the pit, and twist to separate the halves.
- Remove the pit carefully using a spoon or by gently tapping it with a knife.
- Scoop the avocado flesh into a mixing bowl.
- Add lemon juice to the bowl to enhance flavor and prevent browning.
- Mash the avocado to your desired consistency using a fork.
- Season with salt and freshly ground black pepper. Add red pepper flakes if desired.
- In a separate bowl, add the cottage cheese. Blend with a fork or hand mixer for a smoother texture if preferred.
- Drizzle in olive oil and mix well.
- Season with a pinch of salt and pepper, adjusting to taste.
- Preheat your toaster or oven to 400°F (200°C).
- Place the slices of bread on a baking sheet if using the oven, or pop them in the toaster.
- Toast until golden brown and crispy, about 5-7 minutes in the oven.
- Remove the bread and let it cool for a minute.
- Spread a generous layer of cottage cheese (about 1/4 cup per slice) on each slice of toasted bread.
- Add a scoop of mashed avocado on top of the cottage cheese and spread it evenly.
- If using, slice cherry tomatoes in half and arrange them on top.
- Sprinkle fresh herbs over the top for added flavor.
- Drizzle with olive oil and sprinkle red pepper flakes if desired.
